Swissôtel Sydney has unveiled the results of a multi-million-dollar transformation of its grand lobby bar Arches on Market and “Euro-inspired” rooftop pool.
The 5-star heritage hotel’s revamped level 8 bar provides a glamorous space to dine and unwind, with design influenced by the beauty and grandeur of the existing 1930’s architecture of the lobby.
The bar features a Commercial Palazzo style facade and scalloped entry awning; three double height arches and an 8-metre-long Irish green Calacatta marble bar with large glass pendant lights overhead.
A selection of booths, bar stools and relaxed lounge seating are available and a dining area is set up along the Market Street windows. Menus and coasters feature custom illustrations by New York City artist and illustrator, Eliza Fedewicz.
Here, Award-winning Executive Chef John Giovanni Pugliano, serves up contemporary interpretations of classic bar snacks from Arches Prawn Cocktail to the more extravagant Sturia Caviar Oscietra.
The cocktail menu has been curated by Aaron Shuttleworth, co-founder of the Antipodean Hospitality Company, and an Australian-focused wine list has been developed by respected wine consultant Harry Letho, who worked as part of Merivale’s sommelier team at the Ivy precinct.
At the new pool deck – which has been inspired by long, hot European summers – white surrounds contrast with emerald green furnishings to offer a relaxed space for guests. The deck features built-in cabanas, day beds and relaxed booth dining. Here, guests can enjoy al fresco dining and cocktails ordered from Arches bar below.
