Australia’s first Hotel Indigo will open on 1 March 2021, InterContinental Hotels Group has confirmed, with the company today announcing two major hirings ahead of the brand’s debut.
Hotel Indigo Adelaide Markets will be led from the outset by Thomas Zinn – a highly experienced General Manager who has been with IHG for over a decade.
Zinn moves to the role in the South Australian capital having overseen the launch and major refurbishment of several hotels around the world in over two decades of senior leadership experience.
Also named to a key role in the opening of the 145-room hotel is Gabriele Pezzimenti, who will take on the role of Chef De Cuisine. Prior to settling in Australia in 2019, Pezzimenti worked in restaurants around the world, including the three-Michelin-starred Da Vittorio, where he began his career at the age of 15.
In his new role, Pezzimenti will craft all menus for Hotel Indigo Adelaide Markets, drawing inspiration from the fresh produce and wine available at the hotel’s namesake marketplace. The hotel will feature two main eateries – the Australian Market and Meander Eatery and Bar – along with the Merrymaker rooftop raw food bar.
IHG’s second Australian Hotel Indigo location is expected to open in the Brisbane suburb of Fortitude Valley later this year, with additional locations in Melbourne, Auckland and Sydney now also confirmed.
