Hilton Melbourne South Wharf has unveiled its stylish new restaurant and bar, Dock 37 Bar and Kitchen.
Architecture firm Noel Robinson Architects (NRA) has redesigned the 150-seat dining space to embrace its riverside setting and complement the sea meets land concept.
The team has delivered a sophisticated and inviting dining room resplendent with warm timber walls, a striking suspended wine gantry in black steel, soaring ceilings, and full length windows maximising the South Wharf Promenade view.
“We know our diners want approachable and honest food that still feels like a treat and has some restaurant flair to it,” said Glenn Wright, executive chef, Dock 37 Bar and Kitchen.
“I feel passionate about sourcing quality produce and have been inspired by our wharf location to introduce a distinctive menu inspired by the concept ‘where sea meets land’,” said Wright.
Expect simple and beautifully cooked proteins like 270 day grain fed Black Angus Rump, 24-Hour Pork Scotch Fillet, Whole Baby Barramundi and New Zealand King Salmon served with a choice of more than 10 sauces, all made in house. Several dishes have a nod to Glenn’s New Zealand heritage, like the ‘Kiwi’ Mess with manuka honey, kiwifruit sorbet, hokey pokey and a feijoa crisp.
Many dishes are complemented with fresh produce from the hotel’s own rooftop garden. The garden is passionately tended to by Glenn, who has been with the hotel since its opening six years ago and has headed up the kitchen since 2011.
Dock 37 Bar and Kitchen has a long bar with pull-up seating, communal tables and cosy couches to enjoy. The area is complete with a short and tailored menu full of bar-food classics available late into the night. A comprehensive selection of drinks are also offered from well-known classics to a tempting selection of custom-created cocktails, wine housed in the suspended gantry above the bar and dozens of beers on tap.
